Spicy Orange Chicken with Broccoli

After a busy week I don't always want to spend a lot of time in the kitchen making my dinner. There are nights where I get home starving and need to eat right away and this orange chicken was an easy and fast meal packed with flavor. It's a tweaked version of my Orange Ginger Beef and Broccoli with a spicier kick.  It's also a great dish to make for company if you want to be able to enjoy the company you have. Clean up is really easy and this cooks up in mere minutes. Pair this with your favorite rice and you're got a dinner anyone will enjoy. 






Spicy Orange Chicken with Broccoli
1 Chicken Breast
2 Teaspoons Fresh Ginger
2 Tablespoons Apricot Preserves
2 Tablespoons Low Sodium Soy Sauce
1/8 Teaspoon Sesame Oil
1 Tablespoon Chili Garlic Sauce
1/4 Cup Orange Juice
1 Clove Garlic, minced
1 Head of Broccoli, chopped
**Recipe is for two servings**

To make the marinade, Combine all  ingredients from ginger through garlic in a large bowl and whisk to combine. Slice the chicken into thin strips and place in the marinade. Let sit 2-3 hours. When ready to cook, heat a large pan with a small amount of olive oil over medium high heat. Transfer the chicken and the marinade into the pan and cook the chicken until it's done, about 5-7 minutes. Remove the chicken once it's done and cook the broccoli in the sauce. I usually par-steam mine so it doesn't take that long to cook in the pan. You want the broccoli to be a crisp so you can always add a little water to the pan and cover to help the cooking process. Once the broccoli is done to your desired crispness, put the chicken back in the pan and toss to combine. Serve in bowl and garnish with more chili garlic sauce if you want an extra heat kick. Top with fresh orange zest.
