BBQ Grilled Vegetables and Chicken

Happy Memorial Day! Time to kick off summer on the right foot! The right foot to me? BBQ Grilled Vegetables and Chicken. I've been fighting the urge to make BBQ Chicken since I've been experimenting with grilling but BBQ is one of my favorite things so I couldn't hold out long. Instead of just having a the chicken I decided to dress up my favorite vegetables with my BBQ seasoning and grill those as the perfect accompaniment to the chicken. This dish is easy enough to make for yourself or a crowd and puts a new meaning to a one dish meal!  



BBQ Grilled Vegetables and Chicken
2 Chicken Breasts
2 Medium Sweet Potato, sliced
2 Zucchini, quartered
4 Carrots, halved lengthwise
Olive Oil
Salt and Pepper
BBQ Seasoning, recipe below
Your favorite BBQ Sauce

Place the chicken on a cutting board and season liberally with the homemade BBQ seasoning. Let rest a minimum 15 minutes. While the chicken in resting, steam the sweet potatoes and carrots until they are slightly soft. This will help with the grilling time. After steaming, place all vegetables in a large bowl and season with olive oil, salt, pepper and some BBQ Seasoning. Toss to coat and set aside until ready to cook. 

When you're ready to cook the chicken, heat grill to high heat on one side and medium on another. Sear each side of the chicken on the high heat side for 2 minutes. Transfer seared chicken to medium heat side and lower high heat to medium. Brush the top side of the chicken with BBQ sauce. Cover and cook for 8 minutes on each side. Repeat with bottom side of chicken. Adding more sauce when the chicken is finished cooking if you'd like.
You'll want the internal temperature to be 165 degrees. When done, Remove from grill let the chicken rest so the juices can redistribute. 

When the chicken is done, it's time to cook the vegetables. I like to do these in separate batches so they don't become overcooked. Increase the grill to medium high heat and place all vegetables on the grill, brush with BBQ sauce, cover and cook 3-4 minutes. Keep an eye on the zucchini as it tends to cook the quickest. Flip vegetables, brush with BBQ sauce and cook another 3-4 minutes. When vegetables are done, transfer to a plate. Slice the chicken and you're ready to eat! 

BBQ Seasoning
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
1/4 Teaspoon Garlic Salt
1/2 Tablespoon Basil
1/2 Tablespoon Oregano
1/4 Teaspoon Paprika
1/4 Teaspoon Salt
2 Tablespoons Brown Sugar
1/8 Teaspoon Cayenne Pepper
Black Pepper to taste

Combine all spices and use a fork to blend the brown sugar with everything. Store in an airtight container until ready to use. This seasoning is great on vegetables, chicken, beef, even popcorn!
