We're having some very warm weather these days so a heavy dinner and spending time in the kitchen with the oven on is not how I want to spend my evenings. A simple salad also wouldn't do, I needed something hearty with lots of flavor. I grabbed some kale, pomegranate seeds and a pear, tossed that with some pumpkin seeds and sunflower seeds and whipped up a simple yet delicious dressing that rounded out the dish. The lemon in the dressing gives the salad a great burst of freshness while the nuts make it hearty enough that you feel full and satisfied. It's a beautiful salad that's festive and would be the enjoy of the Christmas dinner table.
Pomegranate Pear and Kale Salad
1 Bunch of Kale, ribs removed
1 Pear, diced
1 Pomegranate, seeds removed
1/4 Cup Pumpkin Seeds
1/4 Cup Sunflower Seeds
Rinse and trim the kale. Chop into small pieces and place in a large plastic bowl. Add in the pumpkin and sunflower seeds and combine with the dressing. Transfer to a half the mixture to a serving platter and top with the pears and pomegranate seeds. Top with remaining kale and top with the remaining pears and pomegranate seeds. This laying presentation will make sure everyone gets a well blended salad. Serve with any extra on the side and enjoy!
Lemon Maple Balsamic Dressing
5 Tablespoons Canola Oil
3 Tablespoons Balsamic Vinegar
3 Tablespoons Maple Syrup
1 Teaspoon Dijon Mustard
1 Teaspoon Lemon Juice
Pinch of Salt
Combine all ingredients into a jar. Secure lid and shake until combined. Taste and adjust if need be.
